The Andrew Boss Laboratory of Meat Science, situated in a concrete basement that directs potential customers to the store with modest white paper signage, manufactures locally raised meat and dairy products and promotes them in the laboratory’s store, which is run by University of Minnesota students and staff. 

The store is ideal for college students on a tight budget because things are typically sold for a fraction of the price one would anticipate from a locally sourced and manufactured store.  

In addition, the fact that the laboratory is only open on Wednesdays from 2 p.m. to 5 p.m. helps to keep it somewhat unnoticed. The products they sell are prepared by students from the College of Food, Agricultural, and Natural Resources Sciences. The range and creativity of products are unparalleled, thanks in part to students’ capacity to design products that they would like to see or that they believe community members would find attractive. 

CFANS students who provide the meat lab are inventive in their designs, and the results are frequently popular with clients. 

For example, students created a bratwurst designed exclusively for Golden Gopher football fans, a beer and cheese “Row the Boat” bratwurst, a nod to head coach P.J. Fleck and the football team’s motto.

The meat laboratory has a large selection of steak, ground beef, poultry, ribs, bacon, and nearly everything else a customer could want from a specialty store. The makers pay homage to their Minnesota roots with wild rice bratwurst and Minnesota bratwurst, while also offering unique goods like blueberry and cranberry summer sausage. 

The meat laboratory also produces meat for educational purposes, which is an extra benefit. Although students cannot use everything grown, they save enough meat to stock the store. If you need additional reason to shop at the store, remember that every purchase helps CFANS students with their education.
